Kenbishi Mizuho “Chronometer” is an elegant blend of 2-8 year-old aged sakes made from 100% Toku A Yamada Nishiki (the very best Yamada Nishiki from the very best fields). This is a junmai sake with deep, matured flavours and a mid-yellow hue (totally expected for a sake with intentional maturity to it).
Layered and sumptuous notes of steamed rice, dried fruits, banana bread, soy, chocolate, chestnut & toffee on the nose with a luscious creaminess on the pallet. Kenbishi Mizuho “Chronometer” is smooth & endlessly drinkable and has many fans in its native Japan. In terms of comparison with the other sake in the Kenbishi range it is slightly lighter in body but darker in flavour (toffee, demerara sugar) than both Kenbishi “Sword and Diamond” and Kenbishi Kuromatsu “Black Pine”.
The darker sugars allow versatility in serving temperatures. All the Kenbishi range do well heated – and Chronometer is no exception (it’s actually our Director’s fav. warmed) – but Kenbishi specifically designed this blend to be enjoyed chilled too.
Food pairing is also superb, as if Kenbishi Mizuho “Chronometer”was especially designed to go with the heavier flavours we are used to in the West. Yet it still has enough lightness of hand to harmonise with more subtle styles of food. Pairings include barbequed meats & vegetables, charcuterie, pickles, fish & chips, hard cheeses, oysters & creamy dishes.
