Gozenshu 1859: Gozenshu new brand dedicated to exploration & experimentation with Okayama’s heirloom rice strain, Omachi.
New Mountain is the pasteurised version of Prototype, it has also gone through Roka (secondary filtration) and Mizuwari (balancing with water) stages to produce an approachable, mellow, satisfying and hugely enjoyable brew.
Round & expressive with an excellent balance of sweetness, acidity & umami enhanced by a fat and juicy texture, New Mountain has ripe & rounded flavours of green banana, guava, brown sugar, yoghurt & sweet steamed rice. A beautifully long finish tapers off into spicey, fruity sweetness.
Well-balanced acidity makes this an excellent match for rich or fatty dishes such as Indian curries, deep-fried foods, mature cheese, mushroom & pork. At 50oC+ lactic flavours & subtle umami is promoted, pairing wonderfully with creamy foods (burrata, for example).
