Waning Moon is an hugely popular, uncomplicated, versatile, easy-drinking sake – everything you want from the junmai class – it’s great warm too. It has a light nose of freshly harvested rice and the pallet is clean-tasting and slightly dry.
Slightly creamy cooked rice and caramel are the predominant flavours, ably supported with savoury umami flavours and medium acidity. The tail is lingering but subtle, gently warming the mouth. This is a sake to sit and enjoy with a meal or to share with friends at the end of the day.
Waning Moon pairs exceptionally with burlier, umami-laden dishes – parmesan or other strong and hard cheeses, tomato based sauces, roasted or stewed foods all work well but its strength is in its versatility.
