Gozenshu Light 2026 is an intentionally cloudy sake made using the traditional bodaimoto technique but in a very modern style. It’s also kept unfiltered, unpasteurised, and undiluted (muroka nama genshu) in order to bring you the greatest freshness and zing – the bottle pops on opening and, due to its cloudy nature, you can see the bubbles moving the sake around in the bottle – exciting stuff!
2026’s Light has its usual lower alcohol content (13%) but this year uses high malic acid yeast (Yeast No 77 if you really want to know) giving it a fermented fresh apple vibe not too dissimilar to cider.
Bright and zesty notes of green apple, peach, strawberries & cream; crisp, tight and refreshing with a bright impact, but light body and light umami. Think of it like a crisp glass of white wine but with a bit more thickness in texture due to the cloudy style.
This is a fun, limited availability sake that will charm sake lovers and newbies alike.
