MUGA Red is part of the seasonal MUGA series, released early in the brewing year. There are four in total: MUGA Platinum, MUGA Green, MUGA Red & MUGA Gold.
The MUGA series is all about freshness! Made early on in the brewing year, and bottled on the day of pressing, the MUGA series is muroka nama genshu – unfiltered, unpasteurised & undiluted – and uses a special bottling method to limit exposure to oxygen. Expect some spritz on opening and a juicy, youthful & zingy style.
MUGA Red is made from local Yuki Megami rice. Yuki Megami, which means “Snow Goddess” in Japanese, took 15 years of research and development to cultivate and then for Yamagata breweries to make the prefecture’s signature style of clean & elegant ginjo-style sake. It’s still muroka nama genshu so expect that vibrancy & zest but MUGA Red has an more pronounced sweetness compared to the others with a refined finish.
Expect delicate aromas of strawberries & cream, melon, white peach and orange peel. The palate is silky and quite sweet at first but finishes crisply thanks to its acidity with very well balanced structure. Juicy flavours of sweet apple, strawberry & melon.
MUGA Red pairs well with meat or fish with some fattiness like pork belly or salmon, with grilled/charred flavours (think BBQ), and with works effectively pickled dishes our slightly sharp/sour flavours like goats cheese of citrus.
If you’re here for fresh and exciting namazake (and let’s be honest, who isn’t?!) then the MUGA series is for you.
