Shichiken Founder’s Estate (Shichiken Onakaya Tobinkakoi) is Yamanashi Meijio’s flagship Junmai Daiginjo and is made with local Yume Sansui rice polished to a mighty 27%. The name ‘Onakaya’ is the house name of the historic brewery building.
Founder’s Estate offers opulent aromas of peach, pear, tangerine, lychee and rose water with a full, velvety texture. The weighty body is supported with sweetness and acidity, giving a persistent & long finish. The style is luxurious, exotic and dynamic.

Tobinkakoi is a very lavish way of making sake, it specifically references the method of pressing (filtering) after fermentation is complete, separating liquid (i.e. the sake) from lees (i.e. the undissolved rice solids).
The unliltered sake is hung in cloth bags and clear (or very slightly hazy) sake is released, via gravity, without any pressing. The gentle nature of this method results in very fine, delicious and vibrant sake; however, the exactitude does not end there, oh no! The resultant sake is collected in individual 18 litre demijohns, tasted and then only the finest selected. In this way only the purest and most distinguished section of the sake is obtained. Truly remarkable stuff this Founder’s Estate!
