The sparkling sake that put Shichiken on the sparkling sake map! Shichiken “Sparkling Dry” (Shichiken Yama no Kasumi), launched in 2015, is the culmination of over five years of R&D, and many a failed experiment. For years the brewery had been pursuing a singular goal: to make a sparkling sake, in the traditional Champagne method (i.e. second fermentation in the bottle), to rival good sparkling wine. Shichiken Sparkling Dry is that sake.
Inspired by the mists that envelope the peak of the nearby Mt Kaikoma, the sake is left slightly cloudy, which lends rounder and more luxurious texture to the liquid. The aroma is light and inviting: high notes of green melon, candyfloss & white pear with supporting lactic notes of cheesecake & coconut cream.
Lightly sparkling with a tight & elegant delivery, Shichiken Sparkling Dry is a luxurious and serious sparkling sake with depth, sophistication and delightful acidity that provides structure whilst dancing on the tongue and leading to a nutty, creamy, medium-length finish.
Shichiken “Sparkling Dry” (Shichiken Yama no Kasumi) is elegance in a glass.
Enjoy as an aperitif, with shellfish, caprese salad, cured meets, butter sauces…
