Barrel influence in sake remains rare. There are some examples but most are long-term aged sakes (koshu, like our very own Golden Amber). Yamanashi Meijo are doing some very interesting experimentation around barrel-maturing their still, base-sakes which will then go through secondary fermentation in the bottle and become sparkling. Shichiken “Sparkling Hakushu” (Shichiken Mori no Kanade) is one such sake, making use of second-use, local Suntory Hakushu whiskey barrels!
This wood influence lends a distinct woody jasmine tea note to the sake along with lemon, orange, ginger, peach & macadamia nuts on the nose, while the palate also has flavours of cream soda, hobnobs, ricotta cheese and apple pie. Shichiken “Sparkling Hakushu” is a serious, world-class sparking sake, a grown-up drink that demands attention.
The structure is sublime with great acidity, luxurious bubbles and one of best finishes we’ve ever tasted in a sparkling sake. Complex yet approachable; enjoy Shichiken “Sparkling Hakushu” (Shichiken Mori no Kanade) in a flute, on its own or with rich meat dishes with sweet sauces (hello Peking Duck), cheese and fruit boards, Margarita pizza, caviar, sardines and other oily fish, fresh tomatoes.
