Shichiken White Core (Shichiken Hakushin) was crowned Champion Sake at the International Wine Challenge (IWC) in 2025, the winner among 1476 entries.
Shichiken White Core is the pinnacle of Junmai Daiginjo from Yamanashi Meijo and production is strictly limited to only 2000 bottles per year. Packaged in a beautiful bottle with the label design – by local textile artist Furuya Ena – reflecting the grandeur of Mt Kaikoma: sacred and mysterious.
Shichiken White Core is made from locally grown, low pesticide & fertiliser Yume Sansui rice, polished down to 27%. It is fermented at low temperatures, and then slowly matured at –5°C for one year before bottling. The result of this delicate sake-making is a burst of watermelon, honeysuckle, muscat grapes, and melon aromas, with harmonious sweetness and acidity. Juicy and full with a silky texture that lingers on the palate for a luxurious and rewarding finish.
This lavish expression of Shichiken Hakushin naturally pairs well with buttery flat fish and umami-rich seafood such as caviar and sea urchin but also with zingier flavours such as ceviche, olive oil and sardines.
Best served in a white wine glass to fully express its aromas.
