Shichiken Silk (Shichiken Kinu no Aji), as its Japanese name suggests, offers the ‘taste of silk.’ Made with local Yume Sansui polished to 47%, this Junmai Daiginjo has an excellent balance between aroma and flavour, ably supported by mouthwatering acidity. 

Along with the smooth, silky palate that grows in the mouth, aromas of peach, watermelon, strawberry, and pineapple combine with a hint of white sugar powder, reminiscent of Turkish Delight. The juicy acidity rounds up the delicate sweetness, leading to a long finish. 

Shichiken Silk is quite a bold Junmai Daiginjo: exotic and opulent, so food pairings are generous. Curried lentils, smoky flavours, spaghetti carbonara, and oozing cheeses are firm favourites.
